Potato Carrot Kugel

Ingredients

  • 3 1/2 pounds russet potatoes, grated
  • 3 carrots, grated
  • 1 large onion, chopped
  • 2 eggs
  • 2 tablespoons oil + extra for oiling the pan (or butter or margarine)
  • 5 tablespoons matzo meal
  • 2 teaspoons salt
  • pepper

Directions

  • Grease or oil a 9 x 13-inch baking dish.
  • Preheat the oven to 400.
  • Grate the potatoes and carrots and place them in a large bowl.
  • Beat the eggs in a small bowl and add them to the grated potatoes and carrots with the remaining ingredients (the chopped onion, the oil, the matzo meal, and the salt and pepper.)
  • Pour the ingredients into the baking pan.
  • Bake for approximately 1 hour until the top is brown.
